Roasted Chicken

What would I do without roasted chicken?  I tried 2 new soup recipes this weekend and they were both really yummy.  One was easy to make and the other was simple- just my style.  Let me share:

Chicken and Corn Chili

1 large onion, chopped
1 pound roasted chicken, shredded
2 cups chicken broth
1 jalapeno chile, seeded and chopped
1 3/4 tsp. cumin
1/2 tsp. cayenne pepper
3/4 tsp. salt
1 can diced tomatoes
2 cups frozen corn, thawed
2 cans white Northern beans, drained and rinsed

Combine everything and cook at medium for about 15 minutes, then simmer for about 30 minutes-stirring occasionally.  Enjoy!

Chicken Soup as good as Grandma's (No- but close, and fast!)

3 1/2 cups of chicken broth
dash of black pepper
1 medium carrot, sliced
1/2 cup uncooked extra wide egg noodles
1 cup shredded roasted chicken

Heat broth, pepper, and carrot over medium high heat to a boil.  Stir in noodles and chicken.  Reduce heat to medium.  Cook for about 10 min. or until noodles are tender.  Enjoy!
