Oatmeal Alternative

My family loves oatmeal. Pop Tarts are my secret desire, but lets stick with the subject. My favorite flavor is Cinnamon and Spice, Jeff's is Brown Sugar and Cinnamon, and Katie and Mandy love Cinnamon Roll.

But what are you supposed to do with this non-flavor? There are no takers at my house.

If you have the same problem at your house, don't throw them away. Make this instead...

Saucy Pudding Cake

1 1/4 cups light brown sugar, divided

1/2 cup sugar

2 tablespoons butter or margarine, softened

1 large egg

3/4 cups all-purpose flour

1 tsp. baking soda

1/2 tsp. salt

1 tsp. ground cinnamon

1/4 tsp. nutmeg

1/2 cup water

3/4 cup uncooked quick cooking oats

1 1/2 cups boiling water

1) Beat 1/4 cup brown sugar and next 3 ingredients at medium speed with an electric mixer until blended.

2) Stir together flour and next 5 ingredients. Add to sugar mixture alternately with 1/2 cup water, beginning and ending with flour mixture.

3) Stir in oats.

4) Spoon into a lightly greased 8-inch square pan, and sprinkle with remaining 1 cup sugar (this sounded like A LOT to me so I just used 3/4 cup brown sugar.).

5) Pour 1 1/2 cups boiling water over top. (Do not stir.)

6) Bake at 350 degrees for 40-45 minutes.

7) Enjoy!

Pouring boiling water on top creates a spoonable cake with it's own sauce. Oh yeah.

  3. This is such a good idea! The plain instant oatmeal is the worst & I always donate it to my school's staff room! Now I can make something with it!
    P.S. I am a Maple & Brown Sugar girl myself :)

  4. Tim sometimes buys this cereal and he likes the syrup flavor. I am sure I bought it once and bought a whole box of plain by accident. I will have a look and see if it's still lurking around. I'll give this a try if it is. What a good idea.

  7. Now, that looks fabulous. Oatmeal and oatmeal make a lovely, delish combo and throw in the word, "saucy"... I am in heaven. Thanks for linking up today. xoxo

Thanks for your comment on my blog. My hubby is getting around really, really well. He has a very high pain tolerance ~ which is a great blessing!
