Weight Watchers Day 4- Roasted Sweet Potatoes with Onions

I LOVE roasted vegetables, especially sweet potatoes and onions.  But don't you need olive oil to make them taste delicious?  I had to find out.

Ingredients:
Cooking Spray
2 large uncooked sweet potatoes, peeled and cut into bite sized chunks
1 large uncooked onion, cut into 1 inch chunks

Instructions:
Preheat oven to 400 degrees.  Coat a nonstick baking sheet with cooking spray.

Place potatoes and onion on prepared baking sheet and coat with cooking spray; toss to mix and coat.

Roast until tender, about 45 minutes.  Remove from oven and let cool slightly.

They were delicious!  Crazy good in fact!  The serving size is 2/3 cup for 2 points and you will love every bite.  Try not to hurt yourself while shoveling them in.:)

  2. Hey Lori! How much do you want to lose? I have been thinking about weight watchers. Do you have the recipe for the chicken enchiladas that are suppose to be only 2 points? Let me know. Thanks. That book sounds really good. I can't read right now to much to do but I would if I could! LOL Take care, XO Love, Fran.
