Raspberry Squares
3/4 cup butter, softened
1/2 cup sugar
1/4 tsp. almond extract
1 3/4 cups all-purpose flour
1/4 tsp. salt
1 8 oz. jar raspberry preserves (1 cup)
1/2 cup coconut
In a medium mixing bowl beat the softened butter, sugar, and almond extract until thoroughly combined. Add the flour and salt. Beat until the mixture resembles coarse crumbs. Reserve 1 cup of the flour mixture. Press remaining flour mixture into the bottom of an ungreased 13x9x2 inch baking pan. Spread the raspberry preserves evenly over crust. Sprinkle preserves with the reserved flour mixture and the coconut. Bake in a 350 degree oven for 25-30 minutes or until the crust and top are golden. Cool in the pan on a wire rack. Cut into bars. Makes 30.

ReplyDeleteI'm laughing! At first I thought the title was "Get OUT of your fat pants" like you were going to give us some great exercise or pill to take that thins everyone up... Then I read it right and it all made sense. 'DER, I'm a little slow this week! The recipe sounds great. Ronnie made me gluten free spice cake muffins tonight...YUMMY!
