Mysteries, polka dots, California Rolls, TJ Maxx, cozy blankets, rainy days and getting the first spoonful of peanut butter out of the jar make me smile. Spiders, rude people, cold fingers and toes, baby leashes, people that don't wrap their packages before going to the Post Office, poison ivy and Math (pretty much all of it) make me want to scream. My perfect day would be spent with my wonderful husband and sweet girls- watching movies in our jammies! Of course, having the movie theater to ourselves would be great, too. Please pass the popcorn and M&M's.:) I am saved by the grace of God. He is my constant companion and hears my every prayer. What a blessing! I'd love to hear from you! First Day of Fall!

Fall. is. here.
Bring on the flannel sheets, sweaters, boots and comfort food...

Made this soup the other night.
Sweet with a wonderful kick.

Sweet Potato Peanut Soup

2 TB olive oil
1 large onion (chopped)
3/4 tsp. salt
1/4 tsp. pepper
4 cloves garlic (finely chopped)
2 T fresh ginger (grated)
2 tsp. ground cumin
1/4 tsp. cayenne
1 1/2 pounds sweet potatoes (about 2 large, peeled and cut into 1/2 in. pieces)
14 oz. can crushed tomatoes (I didn't have this so I used 5 fresh roma tomatoes- diced and 1/2 can of tomato sauce with garlic)
1/2 cup creamy peanut butter
4 cups water


Cut up your sweet potatoes like on a cooking show.:)


Then get the tomatoes ready, too.


Choose your peanut butter.  (We seem to have quite a collection at our house.)


Dice your onions.


Heat 2 TB olive oil in a large saucepan over medium heat.  Add 1 large diced onion , season with 3/4 tsp. salt & 1/4 tsp. pepper, and cook, covered, stirring occasionally, until tender. (8-10 min.)


Stir in 4 cloves chopped garlic and 2 TB of ginger and cook for about 1 minute.

(Below- my Pampered Chef garlic press.  My fave kitchen product.  Love. it.)


Stir in 2 tsp. ground cumin and 1/4 tsp. cayenne pepper and cook one more minute.

Add 1 1/2 pounds of sweet potatoes.


Stir in 14 oz. can of crushed tomatoes.  Fresh tomatoes can also be used as seen below.;)


Then add 1/2 cup of creamy peanut butter and 4 cups of water and bring to a boil.


Reduce heat and simmer, covered, for about 20 minutes- until sweet potatoes are tender.


Enjoy!


Later, treat yourself to a Starbucks Pumpkin Spice Latte or a Sea Salt Caramel Hot Chocolate- both from Target.;)

That soup sounds so good Lori! It still is pretty warm here but you can feel things changing. I am so looking forward to Fall!! I love Fall and Spring!

brrrrrrr so cold here we are wearing our gloves already! Need some of your delicious soup to warm us up. Had to drive through 2 floods yesterday, crazy weather. Summer and Spring are my favorite seasons.

We LOVE Fall, but are still hovering around triple digits, so it feels like summer!
