Mysteries, polka dots, California Rolls, TJ Maxx, cozy blankets, rainy days and getting the first spoonful of peanut butter out of the jar make me smile. Spiders, rude people, cold fingers and toes, baby leashes, people that don't wrap their packages before going to the Post Office, poison ivy and Math (pretty much all of it) make me want to scream. My perfect day would be spent with my wonderful husband and sweet girls- watching movies in our jammies! Of course, having the movie theater to ourselves would be great, too. Please pass the popcorn and M&M's.:) I am saved by the grace of God. He is my constant companion and hears my every prayer. What a blessing! I'd love to hear from you! Fresh Apple Cake

Here is a wonderful recipe for you to try:

Fresh Apple Cake

4 cups peeled, sliced apples
2 cups sugar
2 cups flour
1 1/2 teaspoons baking soda
2 teaspoons salt
2 eggs
3/4 cups vegetable oil
2 teaspoons vanilla

Preheat oven to 350 degrees.  In large bowl, stir together apples and sugar.  Add dry ingredients; stir well.  In separate bowl, beat eggs, oil, and vanilla.  Stir egg mixture into apple mixture, blending until just moistened.  Pour into greased 13x9x2 inch pan.  Bake 50 minutes or until cake springs back when lightly pressed.

I have made this cake for many years and just discovered it again last night.  I think it's best when it's warm from the oven.:-)  Enjoy!

Mmmmm, sounds good. I have a recipe similar to this one and have been meaning to make it for a while now. Maybe I can squeeze it into next week.

Yum! I love apples especially cooked. Warm apple cake with a scoop of vanilla ice cream sounds like heaven.

This would be great after Sunday's dinner.
