About Me

My photo
Mysteries, polka dots, California Rolls, TJ Maxx, cozy blankets, rainy days and getting the first spoonful of peanut butter out of the jar make me smile. Spiders, rude people, cold fingers and toes, baby leashes, people that don't wrap their packages before going to the Post Office, poison ivy and Math (pretty much all of it) make me want to scream. My perfect day would be spent with my wonderful husband and sweet girls- watching movies in our jammies! Of course, having the movie theater to ourselves would be great, too. Please pass the popcorn and M&M's.:) I am saved by the grace of God. He is my constant companion and hears my every prayer. What a blessing! I'd love to hear from you! Roasted Chicken

What would I do without roasted chicken?  I tried 2 new soup recipes this weekend and they were both really yummy.  One was easy to make and the other was simple- just my style.  Let me share:

Chicken and Corn Chili

1 large onion, chopped
1 pound roasted chicken, shredded
2 cups chicken broth
1 jalapeno chile, seeded and chopped
1 3/4 tsp. cumin
1/2 tsp. cayenne pepper
3/4 tsp. salt
1 can diced tomatoes
2 cups frozen corn, thawed
2 cans white Northern beans, drained and rinsed

Combine everything and cook at medium for about 15 minutes, then simmer for about 30 minutes-stirring occasionally.  Enjoy!

Chicken Soup as good as Grandma's (No- but close, and fast!)

3 1/2 cups of chicken broth
dash of black pepper
1 medium carrot, sliced
1/2 cup uncooked extra wide egg noodles
1 cup shredded roasted chicken

Heat broth, pepper, and carrot over medium high heat to a boil.  Stir in noodles and chicken.  Reduce heat to medium.  Cook for about 10 min. or until noodles are tender.  Enjoy!
