About Me

My photo
Mysteries, polka dots, California Rolls, TJ Maxx, cozy blankets, rainy days and getting the first spoonful of peanut butter out of the jar make me smile. Spiders, rude people, cold fingers and toes, baby leashes, people that don't wrap their packages before going to the Post Office, poison ivy and Math (pretty much all of it) make me want to scream. My perfect day would be spent with my wonderful husband and sweet girls- watching movies in our jammies! Of course, having the movie theater to ourselves would be great, too. Please pass the popcorn and M&M's.:) I am saved by the grace of God. He is my constant companion and hears my every prayer. What a blessing! I'd love to hear from you! Slow Cooker Tacos

I made this recipe last night and everyone loved it.  (Well, 3 out of 4)  It has lots of flavor and it's healthy.    Yes, healthy and delicious!  Break out your crock pot and give it a try~

Beefy Tacos

1 pound ground turkey
1 yellow onion
4 cloves garlic, chopped
1 can (16 oz.) refried beans (I used fat free)
1 jar (16 oz.) salsa
1 cup shredded sharp cheese
12 corn/flour tortillas
2 tomatoes, chopped
2 cups shredded lettuce
1/3 cup lowfat sour cream

In a large skillet over medium-high heat, stir beef and onion until brown and cooked through, about 6 min.  Add garlic, stir frequently.  Drain excess fat and transfer to crock pot.  Stir in refried beans, salsa, and cheese.  Cover and let simmer until mixture is cooked through and bubbling, 3-4 hours on high or 5-6 hours on low.  Stir and serve over warm tortillas; top with tomatoes, lettuce and a bit of sour cream.  Enjoy!

For dessert, try fresh raspberries over Activia brand Vanilla Yogurt.  It is divine.
