Mysteries, polka dots, California Rolls, TJ Maxx, cozy blankets, rainy days and getting the first spoonful of peanut butter out of the jar make me smile. Spiders, rude people, cold fingers and toes, baby leashes, people that don't wrap their packages before going to the Post Office, poison ivy and Math (pretty much all of it) make me want to scream. My perfect day would be spent with my wonderful husband and sweet girls- watching movies in our jammies! Of course, having the movie theater to ourselves would be great, too. Please pass the popcorn and M&M's.:) I am saved by the grace of God. He is my constant companion and hears my every prayer. What a blessing! I'd love to hear from you! Weight Watchers Day 4- Roasted Sweet Potatoes with Onions

  I LOVE roasted vegetables, especially sweet potatoes and onions.  But don't you need olive oil to make them taste delicious?  I had to find out.


Ingredients:
Cooking Spray
2 large uncooked sweet potatoes, peeled and cut into bite sized chunks
1 large uncooked onion, cut into 1 inch chunks


Instructions:
Preheat oven to 400 degrees.  Coat a nonstick baking sheet with cooking spray.


Place potatoes and onion on prepared baking sheet and coat with cooking spray; toss to mix and coat.


Roast until tender, about 45 minutes.  Remove from oven and let cool slightly.


They were delicious!  Crazy good in fact!  The serving size is 2/3 cup for 2 points and you will love every bite.  Try not to hurt yourself while shoveling them in.:)

Hey Lori! How much do you want to lose? I have been thinking about weight watchers. Do you have the recipe for the chicken enchiladas that are suppose to be only 2 points? Let me know. Thanks.
