- Mysteries, polka dots, California Rolls, TJ Maxx, cozy blankets, rainy days and getting the first spoonful of peanut butter out of the jar make me smile. Spiders, rude people, cold fingers and toes, baby leashes, people that don't wrap their packages before going to the Post Office, poison ivy and Math (pretty much all of it) make me want to scream. My perfect day would be spent with my wonderful husband and sweet girls- watching movies in our jammies! Of course, having the movie theater to ourselves would be great, too. Please pass the popcorn and M&M's.:) I am saved by the grace of God. He is my constant companion and hears my every prayer. What a blessing! I'd love to hear from you! Lori at toosillysisters@cox.net

Cowboy Caviar!
I kept hearing about this Cowboy Caviar.
Sounded kind of rednecky to me. (Is rednecky a word?)
Still, I was intrigued.
I could have eaten the entire bowl- and I made a DOUBLE recipe. *Be sure to enjoy with Multi Grain Tostitos, Ladies!*
Cowboy Caviar
2 TB Red Wine Vinegar
1 1/2 tsp. Olive Oil
1 clove garlic, minced
1/8 tsp. pepper
1 avocado
1 can black beans
1 can corn
1/3 c. sliced green onion
2/3 cup chopped cilantro (Don't be intimidated- it is amazing!)
1/2 pounds tomatoes, coarsely chopped
sea salt to taste
Directions: Dice ingredients and mix together right before serving.
(My fave is eating with Tostitos chips but I have also added this to a salad and put it in soft tacos. It is unbelievably delicious. Enjoy!)

I often make this in the summertime...and it's gobbled up real quick!
Now you know how adventurous I am with food!!!! I am not sure I would like this but I would definitely give it a try. It does look yummy.
